Hawaiian Delight Cookies
1 cup butter or margarine, softened
1 8 ounce package cream cheese, softened
2 1/2 cups all-purpose flour
1 cup chopped macadamia nuts, divided
3 eggs, beaten
1 1/2 cups firmly-packed brown sugar.
1/2 cup shredded coconut
2 Tablespoons all-purpose flour
1 Teaspoon baking powder
Cream butter and cream cheese; gradually add 2 1/2 cups flour.
Mix until well blended.
Shape dough into 1-inch balls.
Pat balls into greased muffin pans, shaping into shells.
Sprinkle 1/2 cup chopped nuts evenly into shells.
Combine eggs and brown sugar in a medium bowl; mix well.
Stir in remaining 1/2 cup chopped nuts, coconut
and remaining ingredients to egg mixture and stir well.
Pour mixture evenly into shells , filling each half-full.
Bake at 350 degrees for 15-18 minutes.
Reduce heat to 250 degrees, and bake for 10 minutes.
Yields 3 dozen
I chose this recipe because it reminded me of the,
wonderful time I had when I went to Hawaii this past summer.
So on warm cold nights, I can think of my time on the
warm sandy beach of Waikiki, soaking in the sun.
