Banana Ginger Cookies
by: 101 Gingerbread Recipes

2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup unsalted butter
1 cup packed light brown sugar
1 cup mashed ripe bananas(2 med)
2 tablespoons grated fresh ginger
1 teaspoon vanilla
1/3 cup granulated sugar for decoration
Lemon glaze and grated lemon rind

Heat oven to 375 degrees. Coat baking sheet with cooking spray.
Mix flour, salt, and baking soda in a bowl. Beat butter and
brown sugarin large bowl until smooth and creamy. Beat in bananas,
ginger and vanilla. Gradually beat in flour mixture. Deop mixture
by rounded tablespoons about 2 inches apart onto baking sheet.
Bake 8-10 minutes until lightly browned and soft-firm to touch.
Let stand 1-2 minutes. Remove to rack to cool. When completely
cooled, frost with lemon glaze and rind

Lemon Glaze
Whisk together 2 cups confectioners sugar, 2 tablesppons of milk,
2 teapsoons of grated lemon rind, 1 1/2 teapsoons lemon juice,
and 1/4 teaspoon salt until well blended. Add milk if to thick,
one drop at a time.



Ginger Almond Cookies

1 1/2 cups of shortening
1 1/2 cups sugar
1/2 cup light molasses
4 cups flour
1 1/2 teaspoons soda
1 1/2 teaspoon salt
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 1/2 cups finely chopped almonds

Cream shortening, sugar, and molasses until fluffy.
Measure flour and mix ingredients. Stir into creamed mixture.
Shape into 2 thick rolls , each 2 inces in diameter.
Wrpa in waxed paper and refrigerate several hours until firm.
Heat oven to 350 degrees. Cut into 1/4 thick slices. Bkae on lighly greased baking sheet 12-15 minutes.
remaining ingredients until uniform. Pour into pie shells.


Gingerbread -Raisin Scones

Preheat oven to 350 degrees F
2 cups all-purpose flour
1/3 cup packed brown sugar
1 tablespoon baking powder
1/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
6 tablespoons chilled butter,(3/4 stick)
1/4 cup milk
1 large egg
3 tablespoons light molasses
1 teaspoons vanilla extract
1/4 teaspoon ground cloves
2/3 cup raisins

Preheat oven to 375 degrees. Lightly grease baking sheet.
Blend first dix ingredients in food processor. Add butter
until mixture resembles coarse meal. Beat molasses and egg
and vanilla in large bowl. Add flour mixture and raisins
and mix gently until dough forms. Gather douogh mixture
into ball. On a lightly floured board, press dough into
1 inch thick round. Cut round into 8 wedges. Place on to
prepared baking sheet and bake about 25 minutes or until
tookpick placed in center comes out clean. Serve warm.



Ginger Oatmeal Cookies


1 package of gingerbread mix
1 cup applesauce
2 cups of quick cooking rolled oats
1/2 cup chopped nuts
1/2 cup chopped raisins if desired
Heat oven to 400 degrees. Mix all ingredients.
Drop dough by teaspoonfulls about 1 inch apart
on well greased baking sheet. Bake 10-12 minutes.

Gingerbread Fruit Muffins

1 3/4 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 finely chopped apple or pear
1/3 cup milk
1/4 cup oil
1/4 cup molasses
1 egg
Preheat oven to 375 degrees F.
Place cupcake/muffins papers in muffin pan.
Mix dry ingredients. Add chopped fruit.
Mix wet ingredients and add to dry. Mix well.
Spoon into muffin papers until 2/3 full.
Bake for 20 minutes or so.
