
~Special Dishes~
My parents had 3 girls and I am the oldest. Mom taught us all to cook.
I learned how to make my mom's stuffing and sweet potatoes.
When we got together for Thanksgiving, we each brought something.
I would make the sweet potatoes and stuffing. Terry brought pies,
Ann made the mash potatoes and green bean casserole.
Mom would cook a turkey and order a honey baked ham. When mom got
Alzheimers, dad ordered the meats. We brought the rest. I did not
get my mom's recipe for her cranberry salad. My sister makes it.
This year I plan to make it and I found a similar recipe.

~Candied Yams~
This was my mom's recipe and I added the nuts.
6-8 yams or 2 large cans, 1 bag marshmallows
1 large can of cut up pineapple pieces
1 cup chopped walnuts, 1 stick butter
1/2 cup pancake syrup, 1/2 cup brown sugar
1/2 teaspoon cinnamon
Cook yams in water until tender, cool then peel skin off.
Cut/slice in large pieces. Heat the butter in a microwave
until liquid. Pour some on to the surface of a glass backing
dish(11x14), arrange the yams on the bottom.
Sprinkle on 1/2 the brown sugar, 1 cup marshmallows, walnuts
and pineapples. Spoon on more butter. Pour on syrup, add
brown sugar and cinnamon. Bake for 20 minutes at 350 degrees.
Add rest of marshmallows and bake for another 5 minutes.

~Chicken Liver Stuffing~
This was my mom's recipe
1 small pack of chicken livers cooked and cut up
1 cup diced celery
1 cup of diced onion
1 box of stuffing, make according to directions
1 cup of chopped mushrooms(my addition)
Sautee onion, celery in mushrooms in 1/4 cup of butter.
Make stuffing according to directions.
Add chicken livers and mix lightly.
Bake in oven according to directions.

~Cranberry Raspberry Jello Dessert~
I remember my mom making this in a beautiful mold.
She would place some pretty dark green lettuce down on a plate
and then turn the mold over the lettuce. It was so pretty!
1(6 oz.) JELL-O Raspberry Flavor Gelatin
2 cups boiled water
1 can (16 oz.) whole berry cranberry sauce
1 can (20 oz.) DOLE crushed pineapple, un-drained
1 (11 oz.) can of mandarin oranges in light syrup, drained.
1 apple, chopped in small pieces.
2/3 cup walnuts
Mix Jello with boiling water. Let it cool.
Mix it with pineapple and cranberries. Put it in the fridge for a few hours, mixing occasionally.
Peel and dice the apple. Take out jello from the fridge, add apple and walnuts.
Let it cool more. Serve with whipping cream.
3- Refrigerate over night or until firm.
